Easy Summer Fruit Cake Make 2 white cakes from your favourite cake mix or split an angel food cake in half. Once cakes are cooled poke small holes with toothpick all over and pour either Cranberry-Raspberry Merlot, Peach Almond Amaretto or Vidal Ice Wine Jelly (slightly heated so it is liquified) over the cake. Then spread with fresh whipped cream and your favourite fruit topping - repeat on top layer. Refrigerate until chilled and serve.
Easy Appetizers 1) Rice crackers with brie, roasted garlic and a dollop of Cranberry-Raspberry Merlot Jelly. 2) A wheel of brie wrapped in phyllo pastry heated and served with any of the jellies. 3) Sausage or egg rolls served with Hot Red Pepper or Cranberry-Raspberry Merlot Jelly. 4) Cream cheese, crab cakes served with jellies of choice. 5) Pate on small toasts with jelly.
Wine Jelly Glaze 3 Tbsp favourite wine jelly 1 Tbsp finely chopped onion 1 Tbsp white vinegar or lemon juice Melt jelly over low heat, add onion stir in vinegar until blended.
Breakfast Good on toast, bagel, croissants, tea biscuits, even french toast and pancakes.
Lunch Try jelly on a sandwich - my personal favourite is a roast chicken sandwich with hot mustard and Apple Cinnamon Chardonnay Jelly. Yummy!
